Marking the 15th installment in this annual series, this expression highlights an advanced grain-science concept by altering the chemical makeup of the grain before fermentation. Utilizing a specialized mash bill of 70% corn, 15% chocolate malted rye, and 15% distillers malt, the rye portion was roasted to a precise level where the grain sugars caramelized.
This enzymatic and thermal transformation fundamentally shifts the ester matrix during distillation in copper pot stills. Maturation occurred within custom-toasted, heavy-char Brown-Forman cooperage barrels inside heat-cycled stone warehouses. The resulting liquid is structurally dense with deep roasted cocoa, mocha, and baking spice notes, standing as a definitive benchmark for collectors tracking the flavor contribution of heavily roasted specialty malts on a traditional bourbon base
