William Larue Weller 2021 release is a 125.3 Proof barrel-strength wheated bourbon distilled at the Buffalo Trace Distillery (DSP-KY-113). This spirit was distilled in the winter of 2009 and matured for 12 years and 6 months in new charred American white oak barrels (#4 char). The technical data for this release indicates that the liquid entered the barrel at 114 proof and was aged on the lower floors of Warehouses C, K, L, D, and Q. This specific maturation climate resulted in a 64% evaporation loss, which concentrated the liquid into a dense, oily structural framework.
Bottled uncut and unfiltered, the technical profile is defined by its massive viscosity and a "polished" profile of toasted marshmallow, caramel, and dark cherry, showcasing the high-viscosity mouthfeel inherent to long-term barrel maturation of the distillery's signature wheated mash bill.
