William Larue Weller 2007 is a 117.9 Proof barrel-strength wheated bourbon distilled at the Buffalo Trace Distillery (DSP-KY-113) and a cornerstone of the 2007 Antique Collection. Distilled in the spring of 1997, this spirit matured for 10 years and 3 months in new charred American white oak. This vintage is technically distinguished by its maturation on the 9th floor of Warehouses I, where the elevated microclimate facilitated a 53.27% evaporation loss. Comprised of 34 hand-picked barrels, this release yielded an estimated 4,250 bottles.
Bottled uncut and unfiltered, the structural integrity of the liquid is defined by its soft, high-viscosity body. The technical profile delivers refined notes of dark caramel, toasted almond, and honeyed fruit, showcasing the creamy character of the distillery’s signature wheated mash bill before the series transitioned to the higher-proof "powerhouse" era of the 2010s.
