Very Olde St. Nick Sainthood is an elite "tanked" bourbon expression bottled by Preservation Distillery, representing a distinct 1980s-era distillation lot. Like its counterparts in the 17-year series, Sainthood was distilled circa 1981–1982 at the historic Stitzel-Weller Distillery in Shively, KY, utilizing a wheated mash bill. This spirit spent 17 years in charred American white oak before being moved into stainless steel tanks to permanently suspend the interaction with wood, preventing the "over-oaked" bitterness common in ultra-aged stocks.
The Sainthood lot is distinguished by its specific Proof (123.4), which captures a unique balance of high-octane esters and silky viscosity. The technical profile is defined by a dense, resinous texture with concentrated notes of dark stone fruit, butterscotch, and the classic "dusty" cedar and leather notes inherent to heritage wheated stocks from the Van Winkle era of production.
