High West A Midwinter Night's Dram is a 98.6 Proof rye whiskey distilled at MGP (Indiana) and High West Distillery (Park City, UT). This seasonal allocation is a non-chill filtered blend of straight rye whiskies featuring two distinct mash bills: a 95% rye, 5% malted barley sourced from Indiana and an 80% rye, 20% malted rye distilled in-house in Utah.
The base spirit is High West’s Rendezvous Rye, aged between 4 and 10 years, which then undergoes a secondary finishing process in both Ruby and Tawny port casks. Maturation in the high-altitude, mountainous climate of Park City accelerates wood interaction, concentrating the dark fruit esters of the port barrels against the underlying herbal and pepper notes of the aged rye blend.
