Domaine Paul Pernot ranks among the most respected growers in Puligny-Montrachet, and its parcels in Batard-Montrachet - the grand cru straddling Puligny and Chassagne - crown the family's range. The 2002 vintage gave the Cote de Beaune whites a rare combination of ripeness and cut, and the finest grands crus of that year became modern reference points for the region. Pernot's whites are prized for purity and tension, qualities that let the top cuvees age far longer than most of their neighbors.

At more than two decades of age, this is white Burgundy deep in its tertiary chapter. Expect a deep gold color and a bouquet that has moved beyond orchard fruit toward honey, roasted hazelnut, beeswax, dried apricot and a truffled, savory undertone, with Batard's signature breadth and stony spine still framing a long, mouth-coating finish. The acidity of the vintage runs bright beneath the richness, holding the wine together the way great aged Batard should.

A grand cru white at this age rewards attentive provenance and gentle handling, so cellar history matters as much as the label. Serve cool rather than cold, around 55 degrees, in a generous glass with no more than a quick splash decant. Mature Chardonnay evolves quickly with air, so pour it on opening and follow its unfolding across the evening.

Roast chicken with morels, lobster in beurre blanc or a wedge of well-aged Comte will meet the wine at its level. For collectors of aged white Burgundy, Pernot's Batard from a classic harvest is precisely the kind of bottle the category was built upon. Give it the biggest glasses in the cabinet and the centerpiece slot at a serious dinner.
