From terraced volcanic slopes high on Howell Mountain, the 2007 Dana Estates Hershey Vineyard Cabernet Sauvignon pairs a celebrated Napa vintage with one of its most dramatic mountain sites. The dry, even 2007 season produced dark, seamless Cabernets across the valley, and harvest arrived early and clean, with mountain fruit coming in thick-skinned and vividly intense. Elevation gave this bottling an extra measure of spine and mineral cut.
Dana Estates took shape in 2005 when Korean vintner Hi Sang Lee acquired the historic Livingston property in Rutherford and rebuilt it into a vineyard-designate Cabernet house with Philippe Melka directing winemaking. Acclaim arrived almost immediately: the estate's 2007 Lotus Vineyard bottling earned a perfect 100 points from Robert Parker's Wine Advocate, a milestone that put the young winery on collectors' maps worldwide.
Hershey Vineyard rests above the fog line near 1,700 feet, where shallow, iron-rich volcanic soils hold yields to a whisper. Farming here is heroic work of terraces and hand labor, with blocks picked in multiple passes. The wine that results is Howell Mountain distilled: stony minerality, dense blackberry and black currant, alpine herbs and a wall of fine-grained tannin built for the long haul.
Approaching its twentieth year, the 2007 has entered a generous plateau, its tannins relaxed enough to show the site's savory herb-and-stone core in full relief. Decant a full hour and serve at 62°F to keep the mountain structure from reading austere; braised short rib or peppercorn-crusted venison is the match. Well-kept bottles should continue on this level into the early 2030s.
