Cascahuin Cerro de Luz is a Blanco Tequila from Tequila Cascahuin in El Arenal, Jalisco, Mexico. This ancestral-style release uses 100 percent Blue Weber agave from the Rosales family's Rancho Cerro de Luz estate, bottled at 98 proof, additive-free.
"Cerro de Luz" - Hill of Light - is the same phrase that gives Cascahuin its name in the Rosales family's pre-Hispanic naming tradition. This bottling honors that root, sourcing estate agave from the Cerro de Luz ranch and processing it the oldest way the distillery still practices: piñas slow-cooked for 120 hours in an earthen pit (pozo) over wood and hot stones, 100 percent tahona stone-wheel extraction, open-air wooden vat fermentation with the agave fibers still in the mosto, and copper pot still double distillation. A five-month rest in glass follows before bottling.
On the nose, it shows roasted agave with smoky earthen-pit character, wet stone, and green herb. The palate brings deep cooked agave, mineral salinity, gentle wood smoke, and lingering pepper, and the finish carries a long, dry, mineral close.
The pit-roast and tahona extraction give Cerro de Luz a textured, mezcal-adjacent profile that sets it apart from Cascahuin's brick-oven Blancos. It drinks well neat or over a single large cube.
