Cascahuín Cerro de Luz Anejo 88 Proof (44% ABV) is produced at NOM 1123 in El Arenal, Jalisco. Its name, "Hill of Light," refers to the pre-Hispanic translation of Cascahuín. This specific batch utilizes 100% Blue Weber agaves harvested exclusively from a single mountainside visible from the distillery, emphasizing a distinct mineral-rich terroir.
The piñas are slow-cooked in traditional stone ovens and fermented in open-air tanks. Following distillation, the spirit is matured for 14–16 months in used American oak barrels previously seasoned for two decades. The resulting Añejo profile balances heavy earthy minerals and roasted agave with the delicate influence of toasted nuts and soft vanilla from the long-term wood contact.
