Cascahuin 11 Brix is a Blanco Tequila from Tequila Cascahuin in El Arenal, Jalisco, Mexico. This 2022 limited edition is a still-strength blend of three distinct fermentation lots, bottled undiluted at 106 proof, additive-free.
The "11 Brix" name refers to the residual sugar reading of the mosto - the fermented agave juice - at the moment it goes into the still. By splitting the same agave run across three vessels (stainless steel, concrete, and wood) and letting each ferment to that same 11-Brix endpoint, the Rosales family isolated how vessel material alone changes the spirit before any aging or dilution enters the picture. The agaves were cooked in traditional brick ovens, extracted with a roller mill, then double-distilled in copper pot stills.
On the nose, it shows intense cooked agave layered with wet cement, black pepper, and herbal mint. The palate brings a massive, oily body with concentrated agave, mineral notes, and dry pepper spice, and the finish carries a long, savory, slightly briny close.
Bottled at still strength after a five-month stainless steel rest, 11 Brix shows the unfiltered weight and texture lost when most blancos get cut to a lower proof. It drinks well neat or over a single large cube.
