Cascahuín 11 Brix is a 106 proof (53% ABV) additive-free Blanco produced at Tequila Cascahuín (NOM 1123). This 2022 limited edition celebrates the art of fermentation by blending three distinct lots. The agaves were cooked in traditional stone ovens and extracted via roller mill before being divided into stainless steel, cement, and wooden fermentation vats.
The "11 Brix" title refers to the specific residual sugar level of the mosto (fermented juice) prior to distillation. Double-distilled in copper pot stills and bottled at still strength without dilution, the spirit offers a massive, oily profile of intense cooked agave, wet cement, black pepper, and herbal mint, stabilized in stainless steel for five months before release.
