The maturation process is defined by a two-stage climate strategy: initial aging for approximately six years in traditional hand-rotated rickhouses, followed by a multi-year finishing period in a LEED-certified limestone cellar built into the natural shelf in Loretto, Kentucky.
Utilizing the signature wheated mash bill of 70% corn, 16% soft red winter wheat, and 14% malted barley, the 2024 release focuses on a "brighter and fruitier" profile compared to the inaugural 2023 batch. The stable, cool environment of the limestone cellar slows the extraction of harsh tannins, allowing the spirit to develop deep structural complexity and rich wood notes without becoming overly dry or bitter. This cask strength expression is non-chill filtered and serves as a primary target for enthusiasts seeking the most mature and refined technical output from the Star Hill Farm distillery.
