Dujac Fils & Père is the Seysses family's négociant label, created around 2000 by Jeremy Seysses as a way to work with appellations beyond the domaine's own vineyards. It deserves honest framing: these are not estate-grown Dujac wines, but purchased fruit and must from trusted growers, vinified and raised by the same team in the same Morey-Saint-Denis cellars.

That distinction is exactly what makes the label compelling. The winemaking carries the family's fingerprints, including a measure of whole clusters, gentle extraction, and a preference for aromatic lift over sheer weight, applied here to village Gevrey-Chambertin, an appellation whose sturdier fruit takes well to the Dujac touch of silk and spice. In effect, the label lets drinkers experience the family's winemaking philosophy without the scarcity of the estate bottlings.

The 2011 vintage produced red Burgundies of moderate structure and early charm, and this Gevrey has evolved on schedule into a mellow, autumnal place. Expect red and black cherry shaded by dried leaves, warm brick, clove, and the appellation's characteristic ferrous, savory undertone, with tannins now fully resolved into a supple, easy frame. It is an object lesson in how much a house style can shape even a village wine.

At close to fifteen years old it asks only a brief airing and a modest chill toward 16°C. Drink it over the next few years with coq au vin, roast duck, or mushroom tarts while grander bottles sleep. Village Burgundy from a great cellar in a mellow year is one of the table's quiet pleasures.
