Spring Mountain Vineyard rises above St. Helena on the eastern slopes of the Mayacamas, an 845-acre property stitched together from historic nineteenth-century estates, including Tiburcio Parrott's Miravalle of 1885. Vineyard blocks climb well over a thousand feet, giving the winery an unusual palette of exposures, soils and microclimates. The estate gained an unexpected second fame when the Victorian mansion at Miravalle starred in the television series Falcon Crest.
The 2004 season moved fast, with an early spring and steady ripening that brought harvest to a close weeks ahead of custom. The estate answered with a Cabernet Sauvignon of concentration and poise, blending 90 percent Cabernet Sauvignon with 8 percent Cabernet Franc and 2 percent Petit Verdot, aged 22 months in French oak and bottled at 14.8 percent alcohol.
In its youth the wine led with cherry-berry fruit, dark chocolate, vanilla bean and sweet black tea over satiny tannins and lively acidity. Two decades on, those elements have folded into a classic mature mountain Cabernet: dried red fruit, cigar box, forest floor and a mineral spine that keeps the finish firm and long. Mountain tannin has a way of guarding fruit through the years, and this bottling shows that preservation in full.
Twenty-plus years of age call for a little ceremony. Stand the bottle upright a day ahead, decant gently to separate the fine sediment that mountain Cabernet throws, and serve just below cellar temperature. The wine sits on its mature plateau now and should hold gracefully through the early 2030s in sound storage. Pair it with braised beef, game birds or hard mountain cheeses.
