Jarvis Estate makes wine unlike anywhere else in Napa Valley: every stage, from fermentation to aging, happens inside a 45,000-square-foot cave carved into the Vaca Mountains, the first complete winery built entirely underground in the United States. Lake William, the estate's proprietary red, is named for the small lake formed by the cave's natural spring and honors founder William Jarvis.
The blend owes its existence to a happy accident. In 1993, a third of a tank of Cabernet Franc was mistakenly pumped into fermenting Cabernet Sauvignon, and the resulting wine so charmed visitors that it became an annual bottling from 1996 onward. Each vintage weaves Cabernet Sauvignon with Cabernet Franc, Merlot, and Petit Verdot from estate vineyards cooled by breezes off the water. Production has stayed small, and the wine long served as the estate's insider bottling, less famous than its varietal Cabernet yet beloved by visitors to the cave.
Raised for roughly two years in new French oak within the cave's naturally constant chill, the 2003 has now spent more than two decades maturing. Its dark plum and currant core has evolved toward dried fig, cedar, cigar box, and cocoa, with velvety, fully integrated tannins. Sediment is likely, and well-kept bottles will show the most graceful development.
Decant thirty minutes before dinner and pair with prime rib, venison, or truffled pasta to match its earthy depth. Mountain-grown Napa blends from strong cellars can coast at this plateau for a while yet, but there is no reason to wait; the wine's story is fully told and worth hearing now. It suits a milestone dinner where what surrounds the bottle matters as much as what fills the glass.
