Woodford Reserve Master's Collection 1838 Sweet Mash is an 86.4 Proof (43.2% ABV) historic, limited-edition heritage release produced by Woodford Reserve Distillery. Released in late 2008 as the third installment in the series, this expression alters standard bourbon production by using a completely fresh "sweet mash" fermentation process rather than the industry-standard sour mash method. The liquid was triple-distilled in copper pot stills from a traditional grain recipe of corn, rye, and malted barley.
Maturation occurred inside charred new American white oak barrels housed within historic stone masonry warehouses. This alternative fermentation technique alters the pH climate during distilling, yielding a technical structural profile defined by elevated notes of soft vanilla, fresh pastry cream, bright citrus fruit, and elegant, integrated wood tannins.
