Penelope Project X Oloroso Sherry & Cognac Cask is a 108 Proof (54% ABV) limited release straight bourbon whiskey produced as part of the experimental "Project X" series by Penelope Bourbon. This 2025 expression utilizes a signature four-grain mash bill of 74% corn, 16% wheat, 7% rye, and 3% malted barley, representing a unique double-cask finishing study. Originally aged for a minimum of four years in new charred American oak at the MGP in Indiana, the liquid underwent a secondary maturation process in two distinct barrel types: Oloroso sherry casks from Jerez, Spain, and VSOP Cognac casks from France.
This evolutionary process yields a rich and complex profile of crème brûlée, dark chocolate, and raisin, balanced by a deep undercurrent of tart cherry and marshmallow with a long, allspice-accented finish.
