Macallan Distil Your World Hong Kong Edition Single Malt Scotch Whisky is bottled at 93.6 proof (46.8% ABV) in a 700ml format, the fourth release in The Macallan's Distil Your World series, unveiled in April 2025. Crafted at The Macallan Distillery in Craigellachie, Speyside, this limited edition single malt distils a city of contrasts—tradition and reinvention, harbour and green peaks—into a whisky its maker calls big, bold and deeply personal. Like every chapter of the series, it pairs a Macallan whisky maker with the Roca brothers' sensory research to translate a single city into single malt.
Lead Whisky Maker Euan Kennedy explored Hong Kong alongside Joan Roca of El Celler de Can Roca, the three-Michelin-star Girona restaurant twice named best in the world, drawing on the city's entrepreneurial energy and its fusion of east and west. Their journey is chronicled in the short film Reimagining Spaces. Kennedy shaped the whisky around the idea of structure, echoing the built environment rising from the sea toward the peaks—layer upon layer, story upon story. He has described it as a whisky of many layers, made to be returned to again and again, its complexity carrying the drinker on a journey of flavour and memory through the city that inspired it.
Matured in select sherry-seasoned European oak hogsheads married with American oak casks, the whisky opens with bold ginger, cinnamon and dried spices—a nod to Hong Kong's bustling spice markets—alongside pomelo, mango, fragrant honey and antique oak reminiscent of a Hong Kong-style egg tart. The palate brings bright tropical sweetness and rounded spice before grapefruit, umami depth and aged oak carry into a vibrant antique-oak finish. It is a profile of genuine contrast—sweet against savoury, tropical against woody—mirroring a skyline where temple incense drifts between glass towers.
The Hong Kong Edition's scarcity is pronounced: The Spirits Business reported that fewer than 500 bottles were allocated to the entire United States market. As the series' first Asian city tribute and Euan Kennedy's signature contribution to the Distil Your World story, it occupies a pivotal place between the Mexico and Paris editions—an essential chapter for collectors following The Macallan and the Roca brothers around the globe.
