This experimental 2011 package features a foundational mash bill composed entirely of 100% rye grain. The liquid was triple-distilled in copper pot stills at the historic Versailles facility.
The core technical focus of the set is a side-by-side maturation study: the New Cask Rye matured in standard new, charred American white oak, while the Aged Cask Rye matured entirely in used, recycled ex-bourbon barrels. This warehouse climate variance yields two distinct profiles, presenting crisp mint, vanilla, and heavy wood spice from the new oak contrasted against delicate herbal notes, citrus fruit, and soft honey from the recycled wood.
