Triple pot-still distillation at the Versailles distillery nods to Scottish and Irish practice, yet by law the spirit rests in new charred American oak rather than the used casks single malts favor — so classic malty nut and biscuit tones pick up caramel and char sweetness no Scottish warehouse would give them.
The generous corn portion keeps the palate round and approachable while the barley does the talking.
