The 2021 Salvestrin Dr. Crane Vineyard Cabernet Sauvignon is estate winegrowing in the most literal sense: every grape comes from the vineyard adjoining the family winery on Main Street in St. Helena. Three generations of Salvestrins have worked this land since 1932, and their signature Cabernet remains the clearest annual reading of one of Napa's oldest vineyard sites.
The blend is 83% Cabernet Sauvignon rounded out with 10% Merlot and 7% Cabernet Franc, aged 21 months in French oak, just under half of it new. That measured approach to wood lets the vineyard lead, layering gentle cedar and cinnamon over ripe cherry, loamy earth, and a whisper of dried herbs, with a silky, cocoa-dusted feel through the finish. It is a classical St. Helena composition in the Bordeaux mold, with each supporting variety adding aromatic reach rather than weight.
The 2021 season delivered one of the smallest crops in recent Napa memory, as a second consecutive drought year pushed vines to produce tiny, intense berries. The upside is in the glass: a medium to full-bodied Cabernet with unusual aromatic clarity and elegant structure, generous enough for near-term drinking yet framed for a long, graceful evolution. Harvest came early and quickly, and the family's proximity to its fruit, with vine rows literally beside the cellar door, paid off in precise picking decisions.
Serve at cellar temperature with a brief decant to open the aromatics. The wine's balance of fruit and savory detail suits herb-roasted chicken as readily as strip steak or wild mushroom pasta. In stable storage, expect this bottling to drink beautifully well into the 2030s while gaining tobacco and cedar nuance along the way. It is Napa history you can pour.
