Matured for a full 3 years in "exhausted" American oak whiskey barrels, this expression is designed to showcase the refined structural integrity of ultra-aged agave without the heavy masking of new oak. Master Distiller Felipe Camarena utilizes a unique 50/50 blend of spring and rainwater and traditional stone ovens to extract the pure, bold character of Highlands agave.
The milling process features "Felipestein," a custom-engineered 20,000 lb. mechanical tahona that ensures the preservation of the agave's natural oils and fibers. The resulting profile is exceptionally silky and balanced, featuring deep notes of roasted agave, dark chocolate, and toasted nuts, accented by butterscotch and soft baking spices.
