Buffalo Trace Experimental Collection Wheated Bourbon 125 Entry Proof is a Wheated Bourbon from Buffalo Trace Distillery in Frankfort, Kentucky. This 2013 release was distilled from Buffalo Trace's wheated mash bill, came off the still at 130 proof, entered the barrel at 125 proof, and aged for eleven years and seven months before being bottled at 90 proof.
The Experimental Collection is Buffalo Trace's long-running program of one-off whiskeys exploring unique mash bills, woods, barrel toasts, and aging conditions, with more than 2,000 experimental barrels aging in the distillery's warehouses. The Wheated Bourbon Entry Proof series held everything constant except the proof at which the new-make went into barrel, with four bottles released at 90, 105, 115, and 125 entry proof to isolate how dilution before barreling changes a wheated bourbon's character - a study that later informed Buffalo Trace's 114-proof house standard for wheated mashbills.
On the nose, it shows cinnamon, raisin, and racy spice. The palate brings cooked berries, sweet honey, cloves, and pepper layered against deep wheated body, and the finish carries a long spice-driven close.
The 125 entry proof was the highest in the wheated series and produced the spiciest, most aggressive expression, with the high-proof entry concentrating spice notes against the wheated mashbill's natural sweetness. It drinks well neat or over a single large cube.
