Buffalo Trace Experimental Collection Baijiu Style Spirit is an American Whiskey from Buffalo Trace Distillery in Frankfort, Kentucky. This 2021 release is the 24th Experimental Collection bottling and the distillery's first foray into baijiu territory - distilled like a whiskey but built on the traditional Chinese baijiu ingredients of sorghum and peas rather than corn-driven bourbon recipes.
The Buffalo Trace Experimental Collection launched in 2006 as the distillery's ongoing program of small-scale bourbon and whiskey experiments. Over 30,000 experimental barrels age in Buffalo Trace's warehouses, each crafted with unique variations in mash bill, wood type, barrel toasting, char level, and aging conditions. Selected experiments are bottled and released in limited quantities in 375ml "lab-style" bottles, each labeled with detailed production notes - a direct window into how master distillers Harlen Wheatley and the BT team push the boundaries of American whiskey-making.
On the nose, it shows rich, savory notes of chocolate, dark cherries, and stone fruit. The palate brings the sorghum and peas forward as confection sugar, and the finish carries a sweet toffee close.
The distillate aged 11 years in three separate cask types - uncharred, charred, and toasted white oak - then the three were married together before bottling at 90 proof. Available in limited quantities beginning late April / early May 2021. It drinks well neat or over a single large cube.
