Weingut Dr. Fischer has grown Riesling on the slate slopes of the Saar since 1758, making it one of the region's oldest continuously farmed estates. Based at Ockfen, a small village set in a side valley near the Saar's confluence with the Mosel, the property is a member of the VDP, Germany's association of top growers, and its vineyards form part of a natural south-facing amphitheatre prized for chiseled, mineral-driven Rieslings.

The 1988 Ockfen Riesling Trocken shows the austere, old-school face of Saar winemaking. Trocken bottlings of this era were fermented fully dry, leaving no residual sugar to soften their piercing natural acidity. In youth the wine would have offered green apple, lime peel and crushed stone; almost four decades later those elements have quieted into dried citrus, herbal tea and smoky slate, carried on a slender, filigreed frame. The wine's spine, however, remains unmistakably Saar: lean, saline and precise.

Mature dry Riesling calls for honest expectations. Without sweetness to act as a preservative, a trocken evolves faster than an Auslese from the same cellar, and a 1988 example now sits at the delicate end of its arc. Anticipate a deep gold color, pronounced petrol and beeswax aromatics, and a light-bodied palate where texture and mineral echo matter more than fruit. Careful storage history is the deciding factor in bottles of this age.

Stand the bottle upright for a day, pull the cork gently, and serve lightly chilled in a large-bowled glass. Drink within the first hour, as mature Saar wines fade once air reaches them. Poached fish, aged mountain cheese or simply quiet attention suit it best; this is a rare chance to taste how dry German Riesling read before the country's modern trocken renaissance. It is a bottle for Riesling devotees rather than casual drinkers, and all the more compelling for it.
