Woodinville Whiskey Co. proved Washington State could make serious bourbon. Founded in 2010 by childhood friends Orlin Sorensen and Brett Carlile — and mentored early on by the late Maker's Mark legend David Pickerell — the distillery grew from a garage-scale dream into the Pacific Northwest's benchmark whiskey house, joining the Moët Hennessy portfolio in 2017.
Every kernel in the 72% corn, 22% rye, 6% malted barley mash bill is grown on the Omlin family farm in Quincy, Washington. The grain crosses the Cascades to be mashed and distilled in Woodinville, then the filled barrels ride back east to warehouses on the Columbia Plateau, where scorching summers and frigid winters drive the whiskey deep into seasoned, slow-toasted charred oak.
After a full five years of that punishing climate cycling, the bourbon is bottled at 90 proof. The extended barrel program — staves cut and open-air seasoned for eighteen months before coopering — is a signature step most craft distilleries skip, and it shows in the polish of the finished spirit.
The pour opens with crème brûlée, sweet corn, and vanilla bean, then unfolds into salted caramel, cinnamon, toasted oak, and a clean rye snap on the finish. Drink it neat to appreciate the texture, or use it to give an old fashioned a distinctly Northwest accent.
