The Still Austin Limited Edition Rare Stock 07 Double Oaked Malted Blue Corn Bourbon is an extraordinarily scarce, distillery-only installment within the Austin, Texas distillery's ultra-premium Rare Stock program. Bottled at a robust 110 proof to preserve its massive complexity, this seventh release marks a historic milestone as Still Austin's first-ever double-oaked bourbon. The whiskey was first matured for five years before undergoing a secondary maturation in a single, highly experimental Texas-made Standard Cooperage oak barrel, yielding a hyper-limited run of just over 300 bottles that drew massive overnight lines.
Built on a deeply creative mash bill of 51% malted blue corn, 44% rye, and 5% malted barley, this expression centers on the innovative choice of malted blue corn over standard grain. Prized by craft distillers for unlocking exceptionally rich pastry, dessert, and honeyed flavor profiles, the malted heirloom grain works in perfect synergy with the extreme wood sugars pulled from the double-oak process. Every grain in every bottle is grown in Texas under Still Austin's grain-to-glass farming partnerships, milled on-site, fermented in open-top wood-and-stainless tanks, and distilled through the distillery's tall copper column still before its intensive two-barrel aging process.
Expect a warm rich-oak nose of sugared strawberry, sweet licorice, cheese danish, leather, and fresh rhubarb, opening into a deeply layered palate of baked red fruit, cotton candy, cardamom, olive oil cake, and honey glaze, with a long finish defined by refined tannins and a unique hint of chartreuse. It drinks exceptionally well neat, with a few drops of water, or over a single large cube.
