Redwood Empire Emerald Giant Cask Strength Rye is the uncut, unfiltered edition of the distillery's signature high-rye whiskey, bottled at full barrel strength straight from the fog-cooled warehouses of Northern California. First released in 2022, it has quickly become a benchmark for West Coast rye at proof.

Every whiskey in the portfolio is named for a legendary tree of the old-growth coast, and this one honors the Emerald Giant, among the fastest-growing redwoods on record, towering some 359 feet over the forest floor. The name reflects a working commitment to the forests themselves: the producer plants a tree for every bottle sold, with more than 1.8 million planted to date.

The mash bill runs approximately 94% rye with 5% malted barley and 1% wheat, joining grain-to-glass California distillate with carefully selected sourced rye aged four to six years in new charred oak. Because it goes to bottle without dilution or chill filtration, strength varies by batch — recent releases have run roughly 115 to 116 proof.

The pour shows a burnt-orange hue and leads with candied citrus peel, pine resin, and fresh mint over caramel and dark honey. The palate is broad-shouldered — cinnamon, black pepper, eucalyptus, and toasted oak — closing on a long, resinous, gently sweet finish.
