Most barrel finishes borrow flavor from another spirit or wine. Garryana takes a different path: the experiment here is the wood itself. Quercus garryana, commonly called Oregon oak, is a gnarled white oak native to the Pacific Northwest and rarely coopered for whiskey. Doc Swinson's, whose aging warehouse sits in garryana country, sent its mature bourbon into casks made from this local species to see what the region's own timber could do.

The answer is a darker, wilder bourbon. Garryana oak is known for pushing familiar caramel and cinnamon notes toward molasses, clove, cocoa, and a savory, almost barbecue-like smokiness. Where a conventional finish adds a glaze of sweetness, this one rebuilds the whiskey's foundation, trading brightness for depth and leaving a distinctly Northwestern stamp on a classically made spirit.

The base is the house Blender's Cut bourbon: a marriage of two Indiana-distilled mash bills, one at 60% corn, 36% rye, and 4% malted barley, the other at 75% corn, 21% rye, and 4% malted barley. After roughly five years and ten months in new charred American oak, the blend moved into the garryana casks for its finishing rest before bottling as part of the limited Exploratory Cask series.

In the glass, look for dark caramel and clove on the nose, then molasses, cocoa, toasted spice, and a smoky, savory edge across the palate, closing on dark chocolate and charred oak. This is a contemplative pour, best taken neat or with a bare splash of water to open the wood.
