The Bardstown Bourbon Company Collaborative Series Phifer Pavitt Reserve Straight Bourbon Whiskey is a limited-edition release combining Kentucky blending with Napa Valley viticulture through heavy wine-cask finishing in Phifer Pavitt Winery Cabernet Sauvignon barrels.
The expression features a 9-year-old Tennessee straight bourbon (84% corn, 8% rye, 8% malted barley) finished for 19 months in freshly emptied French oak Cabernet Sauvignon casks shipped under refrigeration to retain rich wine character. Bottled at a cask strength of 107 proof (53.5% ABV), the residual red wine in the wood naturally reduced the proof while delivering a robust, oily mouthfeel.
The aromatic profile presents dark chocolate, raspberry jam, black currants, and weathered leather, leading to a palate of blackberries, stewed plums, cocoa-dusted almonds, caramel, and baking spices, with a long, warming finish of dark chocolate, plum skins, and espresso-tinged oak.
