The 2026 Still Austin Distillery Reserve Series Sonora Wheated Straight Bourbon is an exclusive, highly limited installment within the Austin, Texas distillery's coveted Reserve Series. Bottled at cask strength to showcase its pure, undiluted Texas character, this expression represents the pinnacle of Still Austin's artisanal experimentation. It has been matured to peak complexity in heavily charred new American oak barrels within the distillery's federally bonded on-site warehouses in South Austin, offering whiskey collectors a rare glimpse into the deep maturation potential of the distillery's inventory.
Built on a premium wheated mash bill that replaces traditional rye with exceptional White Sonora wheat, this expression is centered on this prized heirloom heritage grain. Celebrated by craft distillers for its historic agricultural roots and unique baking properties, White Sonora wheat infuses the spirit with a remarkably soft, creamy mouthfeel and a naturally sweet, pastry-forward flavor profile. Every grain in every bottle is grown in Texas under Still Austin's grain-to-glass farming partnerships, milled on-site, fermented in open-top wood-and-stainless tanks, and distilled through the distillery's tall copper column still before extended maturation.
Expect a warm rich-oak nose of vanilla bean, toasted brioche, caramel drizzle, baked pear, and light cinnamon nutmeg, opening into a palate of honeyed wheat, creamy custard, dark cherry, brown sugar, and toasted pecan, with a long, velvety finish. It drinks exceptionally well neat, with a few drops of water, or over a single large cube.
