WhistlePig The Boss Hog III - The Independent is a Straight Rye Whiskey from WhistlePig Farm Distillery in Shoreham, Vermont. This release is sourced from Alberta Distillers in Canada and aged 14 years, then finished in custom Hogshead casks - 250-liter ex-Scotch barrels rebuilt with new American oak heads - and bottled at cask strength, approximately 120 proof, with a 100% rye mash bill.
The Boss Hog is WhistlePig's annual experimental release - the distillery's outlet for its rarest, most extreme single-barrel rye each year. Every release follows what WhistlePig calls its promises (later expanded to its "X Commandments"): single barrel, bottled at proof, distinctly different from anything else in the lineup, fearlessly first, and irreverently inventive. Toppers are hand-cast in Danforth pewter, and each year's release has its own theme - sometimes tribute to a pig in the WhistlePig family, sometimes a historical figure, sometimes a region or tradition the team traveled to study.
The Independent was the first rye whiskey ever finished in Hogshead casks. The 250-liter Hogshead is one of the largest casks in regular use in the spirits industry - twice the volume of a standard bourbon barrel - and WhistlePig further modified the barrels by replacing the original Scotch-aged heads with new American oak ends. The result is a finish that combines used-Scotch-cask character on the staves with new-American-oak character on the heads, all at a slower wood-to-spirit ratio than a standard barrel.
On the nose, it shows rich mature rye with caramel, dried fruit, and warm spice. The palate brings layered rye, oak, baking spice, and a deeper sweetness from the hybrid Hogshead finish, and the finish carries a long, complex close.
