Waterford Single Farm Origin Dunmore is distilled entirely from barley grown by John Tynan in County Laois, on ground named for An Dún Mór, the medieval fort that once commanded the surrounding countryside. Every grain in the bottle traces back to Tynan's fields — a level of agricultural specificity almost unheard of in Irish whiskey.

Waterford's Single Farm Origin series treated each supplier the way Burgundy treats a vineyard, keeping every farm's crop separate through malting, fermentation and distillation so its individual character could stand alone in the glass. Dunmore's contribution reads as generous and confectionary — a rich, rounded interpretation of the house's slow-distilled spirit.

Maturation follows the distillery's layered protocol: 33% first-fill American oak, 18% virgin American oak, 25% French oak and 24% Vin Doux Naturel wine casks. Bottled at 50% ABV without chill filtration or added color, it opens on chocolate-orange and roasted grain, moves through sultana, baked cinnamon and creamy oatmeal, then lands on lemon curd, marzipan, crisp apple and dark chocolate.

With the stills now silent, each Single Farm Origin edition is a closed ledger entry — this soil, that season, never to be repeated. Dunmore holds its place in the archive as one of the softest, most dessert-toned farms Waterford ever bottled, and a natural first step into the series for drinkers raised on richer malts.
