Old Elk Wheated Bourbon Whiskey comes from Old Elk Distillery in Fort Collins, Colorado, where Master Distiller Greg Metze applies more than four decades of whiskey-making experience, much of it earned overseeing one of the most respected distilleries in Indiana before heading west. His approach at Old Elk pairs old-school patience with unconventional mash bills, and the wheated bourbon is among his most celebrated recipes.

The mash bill is remarkable: 51% corn, 45% wheat, and 4% malted barley. That wheat content is among the highest in any bourbon on the market, pushing right to the edge of what can still legally be called bourbon, and it gives the whiskey a soft, bready sweetness that high-rye recipes simply cannot reach. Old Elk is also known for its trademarked Slow Cut proofing philosophy, reducing spirit strength gradually over weeks rather than days so water and whiskey integrate without shocking the flavor compounds.

Bottled at 92 proof, this release shows exactly what the Slow Cut method is for: a strength high enough to keep the flavors vivid, delivered with the seamless, rounded texture that weeks of gentle proofing produce. The nose offers honeyed wheat bread, vanilla bean, and toffee. The palate is plush and round, with baked apple, brown butter, cinnamon, and soft oak on a smooth, welcoming body, and the finish stretches long with toasted grain and gentle barrel spice.

Wheated bourbons this wheat-heavy remain scarce, and Colorado's high-plains climate gives this one a maturation character all its own. It belongs on the shelf of anyone who loves soft-grain whiskeys — an easy pour neat, a natural in an old fashioned, and a gateway bottle for drinkers who find high-rye bourbons too sharp.
