Kaiyo The Rubi Mizunara Oak Japanese Whisky 750ml

The Rubi takes its name from ruby port, and the last four months of its life are spent in first-fill ruby port pipes shipped from Portugal. Those big fortified-wine vessels stain the whisky with jewel-toned fruit, layering candied orange, dark berries, and a bittersweet chocolate edge over a malt that has already lived a long and unusual decade.

The journey to that port finish is elaborate even by Kaiyō standards. The 100 percent malted barley spirit starts with three years in Japanese mizunara casks, then spends a three-month stretch in a container riding the swells around Japan's coastline before returning to mizunara for roughly seven more years. Only then do the port pipes get their turn.

Bottled at 46 percent ABV without chill filtration, the whisky pours with real viscosity. The nose opens on candied orange and toasted marshmallow, with sandalwood and ripe mango behind them. The palate turns darker: chocolate, plum, and a curl of peppermint that lingers into a long, cushioned finish. It is a dessert-leaning dram that never tips into syrupy territory, because the mizunara backbone keeps a dry, incense-like tension underneath.

Port-finished malts are common enough in Scotland; a port finish laid over ten years of Japanese mizunara maturation is another matter entirely. Pour The Rubi after dinner where its confectionery side can stretch out, and give it ten minutes in the glass, as the fruit deepens noticeably with air.
