Drumshanbo Pinot Noir Cask Finish Single Pot Still Irish Whisky is the wine-finished expression of The Shed Distillery's flagship pot still spirit. Founded by PJ Rigney in 2014 in Drumshanbo, County Leitrim, the distillery brought whiskey-making back to Ireland's rural northwest, and this release shows how confidently its house style has grown into cask experimentation worth seeking out.
The recipe follows the old Irish pot still tradition: malted Irish barley for sweetness and body, unmalted barley for spice and grip, and a measure of Irish Barra oats that lends the spirit its distinctive creamy texture. Triple distillation in copper pot stills produces a clean, expressive new make that carries orchard fruit and grain character in equal measure into the wood.
Primary maturation in ex-bourbon and sherry casks builds a base of vanilla, baking spice, and honeyed cereal. The whiskey then rests in French oak casks that previously held Pinot Noir from Burgundy, drawing out ripe cherry, blackberry, and a gentle thread of wine tannin. Bottled at 43% ABV, it balances the oat-led softness against the darker red-fruit tones contributed by the wine wood.
Serve it neat to appreciate the interplay of cream and berry fruit, or add a drop of water to coax out dark chocolate and floral notes. It suits Irish whiskey drinkers stepping up from blends, pot still devotees curious about wine finishes, and anyone assembling a shelf of distinctive cask-finished bottles from independent Irish producers.
