New Holland began as a Michigan brewery in the late 1990s and spent its early decades perfecting Dragon's Milk, the bourbon-barrel stout that built its reputation. When the company added a distillery, the flow of barrels finally reversed: instead of borrowing casks from bourbon makers, Holland's own stills started filling them. The 2026 Dragon's Milk Origin Toasted Barrel Small Batch Bourbon is the latest product of that turnabout, grain-to-glass whiskey finished under the same roof that made the beer famous.
As with every Origin release, the 2026 edition starts from a 70% corn, 25% malted barley, 5% rye mash bill and a copper pot still that predates modern column efficiency. Five-plus years of charred-new-oak maturation precede the signature move: a finishing stretch in barrels toasted rather than charred. The vintage opened with batches like the pastry-driven "Baker's Delight" and the maple-inflected "Quiet Luxury," with further batches following through the year, all presented at barrel strength, roughly 116-124 proof depending on the batch.
Expect a nose of gingerbread, torched sugar, and black cherry preserve, followed by a plush palate of shortbread, dark caramel, and toasted grain. Cocoa nib and cedar carry the finish, which lingers with a faint sweetness reminiscent of graham cracker.
Kept to batches of a hundred barrels or fewer and released on a semi-annual cadence, the 2026 vintage extends a series that treats wood selection as its central variable. It is the newest entry in the Toasted Barrel line and the clearest expression yet of a whiskey program raised inside a brewery's barrel house.
