The 2025 Garrison Brothers Cowboy Straight Bourbon Whiskey is the eleventh annual edition of the Hye, Texas distillery's flagship limited release — an uncut, unfiltered barrel-proof bourbon bottled at a formidable 146.4 proof (73.2% ABV). Released on December 6, 2025 in a run of 10,000 individually numbered bottles, Cowboy Bourbon is the expression Garrison Brothers holds back its finest barrels for, and the 2025 edition arrives as one of the highest-proof bottlings in the series' history.
Cowboy begins with Master Distiller Donnis Todd walking the ranch's barrel barns and pulling what the crew calls honey barrels — casks that have matured past the house profile into something deeper and sweeter. Those selections rest a minimum of six years in new fire-charred American white oak, an eternity by Texas standards. The Hill Country's uninsulated barns swing violently between scorching afternoons and cool nights, driving the whiskey hard into the staves and surrendering a punishing share to evaporation. What survives is dense, dark, and concentrated, and it goes to glass exactly as it left the barrel: no water, no chill filtration.
The foundation is Garrison Brothers' sweet-mash recipe of 74% food-grade Texas Panhandle white corn, 15% soft red winter wheat, and 11% two-row malted barley — a wheated bill that reads gentle on paper and turns muscular under six Texas summers. Todd's blending for 2025 marries the heavy tannin of long-aged casks with the confectionery core the wheat provides, so the staggering proof lands cloaked in syrupy sweetness rather than raw heat.
In the glass, the 2025 Cowboy pours deep mahogany and opens with dark molasses, glazed pecans, brownie batter, burnt honey, and a wisp of toasted marshmallow and gun smoke. The palate is thick and oil-heavy: vanilla cream soda, dark cherry cola, apricot, black pepper, and salted taffy over a savory undertone of brisket bark. The finish smolders for minutes, trailing caramelized wood sugars, cinnamon, clove, and dark leather. This is a whiskey built for slow, neat pours — and for the top shelf of any serious Texas bourbon collection.
