Cascahuín Cerro de Luz is a 98 proof (49% ABV) additive-free Blanco produced at NOM 1123 in El Arenal, Jalisco. This "Ancestral" style expression utilizes 100% Blue Weber agave harvested from the Rancho Cerro de Luz estate. The piñas are slow-cooked for 120 hours in an earthen pit (pozo de luz) using wood and hot stones, followed by 100% tahona extraction. Fermentation takes place in open-air wooden vats with agave fibers present.
Double-distilled in copper pot stills, the spirit is rested in glass for five months before bottling. The resulting profile is intensely viscous, featuring a unique "candle-smoke" aroma, deep roasted agave sweetness, and the signature volcanic minerality of the Lowlands.
