The 2026 Still Austin 7 Year Bottled in Bond Red Corn Bourbon Whiskey is the Summer 2026 installment of the Austin, Texas distillery's seasonal Bottled in Bond Red Corn release — and the oldest expression in the program to date. Bottled at exactly 100 proof in compliance with the Bottled-in-Bond Act of 1897, this release was distilled in a single season, at a single distillery, and aged for seven full years in federally bonded warehouses on-site at Still Austin Whiskey Co. in South Austin. The seven-year age statement represents an additional year of maturation over the 2025 six-year Red Corn release that drew widespread critical acclaim, including coverage from Breaking Bourbon and Robb Report.
Built on Still Austin's distinctive four-grain mash bill of 36% Jimmy Red corn, 34% white corn, 25% rye, and 5% malted barley, this expression is centered on the heirloom Jimmy Red — a deep-crimson, low-yielding heritage corn variety prized by craft distillers for its dense oil content and naturally sweet, nutty flavor profile. Every grain in every bottle is grown in Texas under Still Austin's grain-to-glass farming partnerships, milled on-site, fermented in open-top wood-and-stainless tanks, and distilled through the distillery's tall copper column still before extended maturation in heavily charred new American oak.
Expect a warm rich-oak nose of red-fruit compote, creamsicle, honey, aged red tea, five spice, and pistachio, opening into a palate of marzipan, sweet almond paste, ripe strawberry, walnut, rock candy, and hazelnut, with a long, dessert-like finish. It drinks well neat or over a single large cube.
