The Distillery Reserve Series is Still Austin Whiskey Co.'s limited-release lineup of single-expression whiskeys crafted by Head Distiller John Schrepel - each one a unique mash bill, finishing technique, or experimental blend, paired with custom bottle art commissioned from a Texas artist. Still Austin is a grain-to-glass Austin, Texas distillery, sourcing only Texas-grown grains and aging in 53-gallon American oak barrels using the distillery's signature "slow-water reduction" technique that adds water in small increments as the barrels endure Hill Country temperature swings. DRS bottles sell first-come, first-served on the distillery's website and must be picked up in person at the Austin tasting room.

For the label, Still Austin paired the distiller's art with the work of Texas writer Stacey Swann - each hand-written label contains a fragment of her short story, with the complete piece published at stillaustin.com/goodchaos.

On the nose, it shows dried dates, cannoli, cherry pie a la mode, spiced cranberry jam, and mulled wine. The palate brings full-bodied chocolate-covered raisins, blueberry pancakes, fresh clove, pumpernickel toast, and fig, and the finish carries winey notes of cinnamon, cocoa powder, and stewed wild berries.

The Port finish leans the 100% rye base into red-wine territory - cranberry, dark berry, and chocolate carry through palate and finish. It drinks well neat or over a single large cube.
