Still Austin Oaxacan Green Corn is a cask-strength 110–123 Proof (55–61.5% ABV) ultra-rare, single-barrel bourbon produced at the Still Austin Whiskey Co. distillery. This high-intensity, small-batch "Order of Nancy" private selection is distilled from an exotic mash bill featuring heirloom Oaxacan Green corn, sourced to highlight unique floral and nutty characteristics. Maturation occurred over at least 4 years in new, charred American oak barrels within the distillery's Austin-based urban rickhouses.
The punishing Texas heat accelerated the extraction of deep wood sugars, resulting in a dense, high-viscosity spirit with a remarkably creamy texture. Technical specs highlight a concentrated profile of toasted pepitas and dried sage, balanced by the classic Still Austin sweetness of vanilla bean and a lingering finish of dark honey and earthy oak. As a single barrel product, the final ABV varies by individual cask, reflecting the unique chemical interaction between the heirloom grain and the specific maturation site.
