Still Austin Limited Edition Rare Stock 06 is a 103 Proof (51.5% ABV) fruit brandy produced at the Still Austin Whiskey Co. distillery. This February 2026 release represents the sixth installment in the Rare Stock series and is distilled entirely from local apples rather than a traditional grain mash bill. The spirit underwent a dual maturation process, aging for three years in new American oak barrels before receiving a secondary finish in French oak casks.
This specialized aging in the volatile Texas climate has accelerated the interaction between the fruit distillate and the wood, resulting in a complex profile of baked custard, poached pears, and malted milk. It is bottled at a sturdy 103 proof and remains non-chill filtered to preserve its natural viscosity and aromatic oils.
