This 100% Blue Weber single-estate agave spirit is harvested from the Los Altos highlands, slow-cooked in traditional stone ovens for 48 hours, and double-distilled in stainless steel pot stills.
Technical maturation for this expression involves aging for 19 months in barrels that previously held Thomas H. Handy Sazerac Straight Rye Whiskey. This specific wood interaction with high-proof rye casks imparts a technical profile defined by aromas of honey and red fruit, with a robust palate of cooked agave, fig, and heavy rye spice followed by a long finish of toasted oak and black pepper.
