Still Austin Oated Special Release is a 111.8 Proof (55.9% ABV) Distillery Exclusive bourbon produced at the Still Austin Whiskey Co. distillery. This 2025 release features a unique mash bill that swaps traditional rye for a high percentage of Texas grown oats to create a softer and creamier texture. The spirit was matured for a minimum of four years in new charred American oak barrels within the intense heat of the Texas Hill Country which accelerated the extraction of deep wood sugars.
Because it is bottled at a sturdy 111.8 proof and remains non-chill filtered, the liquid maintains a heavy and oily mouthfeel. The profile is defined by rich notes of toasted marshmallow, vanilla custard, and honeyed grain, balanced by a long finish of seasoned oak and soft baking spices.
