Penelope Tokaji Cask Finish 8 Year 100–116 Proof (50%–58% ABV) is a limited release straight rye whiskey produced as part of the specialized Cooper Series by Penelope Bourbon. This 2024 expression utilizes a high-rye distillery mash bill of 95% rye and 5% malted barley, representing the brand's oldest rye offering to date. Originally aged for eight years in new charred American oak at the MGP Distillery in Indiana, the liquid underwent a secondary maturation process in rare Tokaji Aszú wine casks sourced from Hungary.
This evolutionary process yields a rich and complex profile of honeyed apricot, golden raisin, and vanilla bean, balanced by a deep undercurrent of peppery rye spice and toasted oak with a long, decadent finish.
