Penelope 17 Year American Light Whiskey 138.8 Proof (69.4% ABV) is a highly allocated, limited release produced by Penelope Bourbon. This 2025 expression, the third installment in the brand's ultra-aged series, utilizes a nearly 100% corn mash bill of 99% corn and 1% malted barley. Originally distilled in 2006 at the historic Seagramās facility in Lawrenceburg, now the MGP Distillery, the liquid was distilled to an exceptionally high 189 proof.
It matured for 17 years in second-fill oak barrels, allowing for a delicate, spirit-forward profile that avoids the heavy tannins of new charred oak. This evolutionary process yields a rich and complex profile of butterscotch, cake batter, and vanilla bean ice cream, balanced by a deep undercurrent of savory cinnamon and waffle cone with a long, "hazmat-level" warming finish.
