Fortaleza Cantina Mayahuel Still Strength is a Blanco Tequila from Destileria La Fortaleza in Tequila, Jalisco, Mexico. This expression was hand-selected by Cantina Mayahuel, the iconic San Diego cantina opened in 2006, and bottled straight off the still without a water cut at 92 proof, additive-free.
Cantina Mayahuel has built a reputation for one of the deepest agave-spirits programs on the US West Coast, and this Still Strength Blanco selection bottles their pick of the distillery's most full-bodied Blanco run. Production follows Fortaleza's traditional methods at NOM 1493: 100 percent estate Blue Weber agave, brick-oven slow cooking, tahona stone-wheel extraction, open-air wooden vat fermentation, and double distillation in small copper pot stills.
On the nose, it shows baked ripe agave layered with green olive, citrus, fresh herb, and earth. The palate brings concentrated cooked agave, black pepper, vegetal depth, butter, and mineral notes, and the finish carries a long, oily, savory close.
By skipping the typical proof cut before bottling, the Still Strength Blanco preserves more of the oils, aromatics, and body that get lost in standard 80-proof Blancos. It drinks well neat or over a single large cube.
