Buffalo Trace Experimental Collection Old-Fashioned Sour Mash Bourbon (125 Entry Proof) is a Bourbon from Buffalo Trace Distillery in Frankfort, Kentucky. This August 2015 release is paired with a companion 105 Entry Proof bottling and built on a traditional sour mash process in which the bourbons are allowed to sour naturally before yeast addition - a contrast to the modern practice of "setting back" a portion of a previous batch's mash to seed fermentation.
The Buffalo Trace Experimental Collection launched in 2006 as the distillery's ongoing program of small-scale bourbon and whiskey experiments. Over 30,000 experimental barrels age in Buffalo Trace's warehouses, each crafted with unique variations in mash bill, wood type, barrel toasting, char level, and aging conditions. Selected experiments are bottled and released in limited quantities in 375ml "lab-style" bottles, each labeled with detailed production notes - a direct window into how master distillers Harlen Wheatley and the BT team push the boundaries of American whiskey-making.
Buffalo Trace closed out the 2015 Experimental Collection program with this paired sour-mash study, releasing one barrel entered at 105 proof and one at 125 proof. Both barrels aged 13 years and 3 months, allowing a direct comparison of how entry proof shapes flavor development across the same fermentation and aging conditions.
The 125 Entry Proof variant brings more concentrated barrel character into the spirit since less water dilution means more flavor compounds extracted from the wood per gallon. Bottled August 20, 2015 at 90 proof. It drinks well neat or over a single large cube.
