WhistlePig The Boss Hog XII - Feather & Flame is a Straight Rye Whiskey from WhistlePig Farm Distillery in Shoreham, Vermont. This 2025 release is aged in new American oak then finished in the world's first pulque curado de cacao barrels: casks seasoned with a pulque curado built from agave, cacao, and three traditional Mexican peppers - chiltepin, guajillo, and pasilla. Bottled at cask strength (range 104.8-108.4 by barrel).
The Boss Hog is WhistlePig's annual experimental release - the distillery's outlet for its rarest, most extreme single-barrel rye each year. Every release follows what WhistlePig calls its promises (later expanded to its "X Commandments"): single barrel, bottled at proof, distinctly different from anything else in the lineup, fearlessly first, and irreverently inventive. Toppers are hand-cast in Danforth pewter, and each year's release has its own theme - sometimes tribute to a pig in the WhistlePig family, sometimes a historical figure, sometimes a region or tradition the team traveled to study.
Feather & Flame draws on two Aztec "drinks of the gods" - pulque, the fermented agave sap of pre-Columbian Mexico, and xocoatl, the chili-laced cacao that became modern chocolate - and fuses them into a single seasoning liquid. The result is a finishing barrel WhistlePig calls a world first for whiskey. The release continues the Boss Hog tradition of an extreme, single-source theme: where prior releases drew on Japan, Greece, the Philippines, India, and the biblical Mediterranean, the twelfth turns toward Mexico. The hand-cast Danforth pewter topper carries the Aztec feather-and-flame motif after which the release is named.
On the nose, it shows caramel, dark chocolate, and orange zest. The palate brings bright citrus leading the way, balanced by soft oak and cocoa with subtle earthy spice, and the finish carries a long close of savory cacao giving way to herbaceous chili pepper warmth.
