WhistlePig The Boss Hog VIII - LapuLapu's Pacific is a Straight Rye Whiskey from WhistlePig Farm Distillery in Shoreham, Vermont. This 2021 release is sourced Canadian rye (Alberta Distillers) aged nearly 18 years in new American oak - bottled as a 17 Year expression - then double-finished in small-batch Philippine Rum casks: first in 7-year-old Philippine Rum barrels, then in 10-year-old Philippine Rum barrels with a higher toast. Bottled at cask strength (range 104.8-106.5 by barrel), with a 100% rye mash bill.
The Boss Hog is WhistlePig's annual experimental release - the distillery's outlet for its rarest, most extreme single-barrel rye each year. Every release follows what WhistlePig calls its promises (later expanded to its "X Commandments"): single barrel, bottled at proof, distinctly different from anything else in the lineup, fearlessly first, and irreverently inventive. Toppers are hand-cast in Danforth pewter, and each year's release has its own theme - sometimes tribute to a pig in the WhistlePig family, sometimes a historical figure, sometimes a region or tradition the team traveled to study.
LapuLapu's Pacific is the second half of the Boss Hog circumnavigation arc that began with VII Magellan's Atlantic. Magellan's voyage ended in the Philippines on April 27, 1521, when Filipino chieftain LapuLapu defeated him at the Battle of Mactan; five hundred years later, this release honors LapuLapu as a symbol of strength and independence, with his likeness cast in the hand-made pewter pig topper. The Philippine Rum barrels themselves came from a small island just southwest of Cebu, where the battle took place. WhistlePig also tried to ship rye to Spain to finish where the lone surviving ship of Magellan's fleet returned - those barrels never came back. The Boss Hog VII (Magellan's Atlantic) won Best Rye Whiskey at the 2021 San Francisco World Spirits Competition.
On the nose, it shows maple syrup and molasses balanced by light pepper, clove, nutmeg, spearmint, and fresh rosemary. The palate brings burnt pineapple, lemon peel, mint tea, cinnamon, and rolling caramel from the tropical rum-cask influence, and the finish carries a long, bright close of spiced apple, allspice, bay leaf, and green tea.
